Are you a Travel Agency or a hotel or....
My first guess in either case would be customer satisfaction with the service provided.... when people go on vacation, they want to get their money´s worth and relax. They want no hassles, no mishaps, headaches and so on....
Have you mapped out your processes whatever they might be?
Give us some more info on your particular business and I´m sure you´ll get some good feedback....

OK.... then you could use (besides satisfaction) :
1) Quantity of the tourist packages sold x total capacity of clients per package (would tell you if you are offering the right package at the right time of year)
2) Total cost of package x predicted cost - profitability

You could calculate percentage of first timers and repeat visitors - this would be a good indicator for repeat business.

Also consider the following -
a. Percent visitors opting for packaged tours
b. If you have online booking facility, you could have KPI to measure online vs manual booking.

What about something comparing the destinations of the packages sold, Cruises, Beach, ski, safaris... That would give you an idea to what your customers are looking for...Just a suggestion.

I'm going to give my standard answer to questions regarding how to identify KPIs: no one knows better than you what's important for your business, and what needs to be improved. If you've identified your key processes, you should have also identified inputs, processing steps, and outputs. If you haven't identified key processes, it's too early to be concerned with indicators for them.

…it also worth looking from your customer point-of-views such as how satisfied they are with your services and how likely they are going to recommend your services to their colloquies…
