This is usually done by reviewing the customer's specifications, including written and drawings. It can also include requirements that are not specific to the product, for example requiring a lab be registered to ISO 17025.
Let us not forget that 7.2.2 also requires record keeping of this review; 7.2.2.1 requires a waiver process if certain requirements can't be met, and 7.2.2.2 requires a feasibility analysis that incorporates risk analysis.
