We are a small distributor and I we sometimes take out information form Manufacturers’ certificates (ie: other distributors names) so that our client can go and purchase directly from them. We do not alter the original so we still have the original with all the information for traceability.
I want to know if this is okay or does iso 9001 say it has to be done a different way because I have checked and I can’t find anything.

This is a common business practice and as long as you kept the original properly, there should not be any issues.

Yes, you only need to keep these certificates as records.
