Tourist resorts. FSMS is FSMS no matter. At present i believe you should appoint a team to look into the implementation of HACCP in your setup Veerabahu. Ensure a multidisciplinary team. people from sales, operations, marketing and food service. as it deals with food safety consider people with some knowledge regarding food safety also.
as in the other post. Consider the PRPs. prerequisite programs. being a tourist resort consider cleaning, pest control, record keeping, good manufacturing practises, storage and handling as basic PRPs. SOPs put the PRPs at work-they should be some laid out procedures on how to do some tasks in your establishment e.g thawing of meat/seafood. these can be written down, it makes life easier when they are
