Thanks,
If your objective is quality improvement, some of the things that you should look into are:

Quality Management system if any
If no, whether they are adopting any good manufacturing practices
Next you may want to look at the process controls and product controls
Finally, the people or competency issues

You say that you want to assess a company but not what you want to assess against. There has to be criteria against which you will asses or the results could end up just being opinion.

The criteria could include a standard (e.g. ISO 9001); procedures; regulatory requirements; contractual requirements; etc.

If I want to quickly assess an operation, I'm going to take a walk. Things such as lot's of inventory or WIP (work-in-progress), the condition of the equipment, elements of a visual workplace are key aspects.

If I'm interested in trying to understand their maintenance program, then the first place I'll walk is their spare parts room. If they aren't taking care of their spare parts, then it is unlikely they are taking care of anything else.

As a previous poster mentioned, what are you really looking to accomplish with this assessment?

- what is purpose of assessment (this will drive what you assess to)?
- could assess performance (e.g., trends in sales, profitability, cost of quality, scrap/rework rates, productivity, inventory turns, ...)
- could assess compliance (e.g., customer requirements, regulatory requirements, company policies/procedures)
