Please Help! Standards of Operations for Bed & Breakfast

I am searching for a Standards of Operations Manual for a Bed & Breakfast. Specifically how to handle the innkeeper running the bed and breakfast. Determining "days off" and personal guests the innkeeper can invite to stay at B & B.

Not sure about the US but over here, days off (minimum) for the employed are determined by labor laws and 'personal guests' by the organization's business policy. Nothing to do with any standards but 'trade associations' may set guidelines to help regulate the industry.
