Can you be a little more specific? Do you know your throughput? How many lines are operating? In terms of capacity, are you wanting to estimate meeting some kind of production demand? Do you have inventory? Is your demand constant?
My background is in Operations Research, which does include capacity planning. As pointed out by BradM, we would need to know a lot more details. I've been involved in the past in several production lines, analyzing their data, and finding the choke points and giving suggestions for increasing capacity.
