I suppose you can do it any way that gives you a good result...

When I went through this exercise, a map showed processes, stalls (waiting) and times for each all on one map. If Product A took 2hrs at step 1, and product B took 18 hours at the same step...they would be two different maps for me.

But again, you may call it one map, and simply plug in the various timings....at that point it is just preference and terminology.
