Is it ok for a Document Controller (knowledgable in ISO 9001 only) to apply/work in a company that is practicing ISO 14001:2004, ISO 27001:2005 and ISO 9001? Can a DC perform the job the way it should be without exposure on ISO 14001:2004 and ISO 27001:2005 standards?

From general standpoint, I think it is a question of job description for this role and availability of resource ( training in this case) by company management.
However we should have more info to assess this. Why don't you suggest to make an internal audit on training process by your internal auditors team? Your case could also happen in other processes inside your company...

Knowledge of standards isn't likely to be much help to them to do their job. Only a few people ever really need to know the contents of the standards to do their jobs...

One would hope that documents would be controlled similarly from one system to another. Unless there is a whole lot more involved, I cannot imagine why you couldn't learn their system.

Why can't ? It's not a big deal for someone who is acquainted with one system and is switching over to another. Please remember that the control of document has to be done in accordance with the organization's own procedure documented for this purpose. (ISO 14001 though doesn't mandate a documented procedure but in any case a procedure for Doc. control is required.) Also the methodology and requirements for doc. control are almost same for all the 3 systems such as ensuring approval/ re-approval of docs. before use, they are periodically reviewed, changes and current versions are identified, their distribution controlled and obsolete docs. are identified and prevented from unintended use etc. etc.

Please also note that ISO 14001 require far less documentation compared to 9001.

So the answer to both of your questions is 'yes'.
