Creating a copy of something and then certifying that the copy is identical to the original does not normally invalidate or supersede the original, and is not forbidden unless officially specified so.

In general, a signature and a date only signify what they are established to signify, by the relevant parties.

That would be fine

My point was not to create a fresh "wet ink" DoC that was only signed on day sent to customer

Clarification: My reference to wet ink was in relation to signing (and dating) the photocopy, that already includes the photocopy of the original signature and date. That wet signature would only signify the issuance of the copy, as a copy. As such I think it's perfectly legit.
