Exclusions Table

I am having a problem in documenting what could be included or not included on the Exclusions Table. I've read the ISO9001:2000 Standards and see some quality manuals that are available online, however I'm a little bit confuse on how do I document the Exclusion Table. We are an ISO9001 certified but the only thing that we don't have is Item # 4.19, which is servicing from the 1994 edition. And my understanding that the one that can be excluded on the 2000 version, is clause 7.0 Product Realization. Therefore, how do we provide Servicing which is I think Clause 4.9 on ISO9001:2000? Do we still have to exclude Servicing since we don't have this clause? For quality objectives, where do I start? We have a meeting on ISO and we discussed this however, we have it patterned on the quality policy, would that be a good idea? please comment.
