How to get appropriate procedure per area-where to start?

If you need to know if all requirements of ISO 9001:2000 have been met, then you may want to use a checklist. You can then go to each area, and verify that they have required procedures. You can make notes on the checklist, and then determine what areas still need certain procedures or instructions.

If you need a checklist, you can probably find it in a search on the Cove, or private mail to me, and I can send you one that I know has all the requirements listed by ISO 9001 section.
Both, if necessary to have a level III documents.

It seems to me the folks responding have made some excellent suggestions.

I have an additional suggestion for ensuring the "documented" procedure matches the actual activity. It used to be that only very large wealthy organizations could afford to do this, now anyone with a couple of hundred dollars can buy and use a digital video camera to record the process. The video can be viewed and reviewed to determine the most efficient and capable way of performing the activity. If modifications are required, they can be made and the activity recorded with the modifications. Make sure there is a "voice over" narrative which describes the activity and the "tips and tricks" which may not be apparent at first viewing. Digital copies can be transferred to CD or DVD or transmitted over the internet.

New hires and transferees may be trained with the videos and then their activity recorded for comparison to the "Standard." Periodically, record the activity again to determine the operators maintain the required level of competence. The video "library" should be available for review by operators and supervisors alike.

The wonderful thing about technology is that it has freed us from the strictures of the printed page.

Once you have begun to use the video camera for one purpose, you'll be amazed at the different uses you can find for it beyond documenting a "process," including sales, recruitment, supplier audits, etc.
