I'm not an expert in chemicals, but I've certainly worked with some folks who were. If my internal experts told me the chemicals had no expiration date, I would defer to them as the subject matter experts unless I could prove otherwise, and do as you said and document it and label them as such and move on. If an auditor challenged that determination, he/she had better be able to prove it.
