Can anyone supply me with an example of a preventative maintenance schedule for flow soldering.

Maybe somebody who does this every day will chime in ... but if not, here's what I've seen.
The oven/equipment manufacturers should be able to give guidance. Have you tried contacting them?
The main abuses I've seen for this kind of equipment are not changing the suction cups on chip inserters often enough, allowing the chain oilers to run dry and not checking the thermocouples used to set temp profiles. Oh, and trying to get too many miles out of the solder stencil.
