Process Documentation for ISO 9001:2015

Hi guys, we are undergoing inventory audit this week and the auditors are asking for procedures on each and every process that they encounter. Per 9001:2015 documentations are not that mandated as long as the process follows the standards and there are evidence that supports it. Now, they have highlighted the process that don't have documented information as findings. What do you think should be the proper explanation for me to deal with this situation?

You are correct that documented procedures are not required in all the clause groups. Less experienced auditors often expect documented procedures for everything, and find it difficult to audit without these "shalls," especially given the broad requirement for documented information required by the QMS. Such auditors will demand written procedures where controls are not otherwise clear.

You have two options:
1) Explicitly show the auditor(s) why the processes are in control and conform to the standard, with or without procedures (there can be other documentation).
2) Dispute the findings to the auditor's Certifying Body. The auditor is by no means the final authority in these matters, and should have detailed in the opening meeting your right to dispute and how that's done.

Ideally you will have already done #1 before disputing, especially since being able to describe as much will help your case with a dispute.
