Understanding 8.3 for services

I work for an Engineering Consultancy firm, and I'm in the process of making a QMS following the ISO 9001:2015 standard.

I'm struggling to understand Clause 8.3, we provide services as opposed to products, and we also have different departments that produce different engineering services. Do I need to include all department's processes or do I only include the processes that crossover?

We're in the same situation. For our QMS, we considered "service" as our "product" and that helped us to see how to apply things.

Not sure what you mean by "processes that crossover."
