how to understand the quality mangement system processes? Does that refer to all the processes identified during the establishment of the quality system?

From the quality system level, they include:
1.management process;
2.resource management;
3.product realization;
4.measurement,analysis and improvement;

I suggest you to look at ISO TS implementation guide of AIAG. At pag.165 they provide examples of Quality mgmt system audit, process audit and mfg audit. In the QMS audit it can verify how the KPI/metrics of the organization meet customer expectation ( this is usually done auditong the mgmt review) . You can also put attention on continual improvement on QMS processes to verify effectiveness and efficiency. Check also documentation ( including documented procedures and record) to verify conformance.

To add something to my previous response.
Consider that it is allowed to do the QMS audit, process and mfg audit both in separate and combined way.
In QMS audit you shall evaluate that your QMS meets all ISO TS clauses, including customer requirement.
There is also a good process identification tool of AIAG to perform audit.

To add to the good advice from Qusys, there are other sources of information which may give clues as to how your processes can be monitored (and if applicable measured) such as the number of product NC's, complaints, returns, rejects, scrap, material usage, cycle times, etc.

We are in the 'check' quadrant of the PDCA cycle so it is important to see how well the 2 previous quadrants were performed i.e. did we 'plan' well and did we 'do' the job well.

So how we select information from organization's records to demonstrate the ability of the processes to achieve planned results? I meant how we can find how many processes the organization have? and how many indicators are set for each process?

Some of the information for some processes will already be there e.g. NC's complaints etc. Others you may have to start creating from scratch.

You decide what is important to your company - if you are wasting time and money in certain areas, start measuring it and then you can start to control it.

I am not sure it matters how many processes there are, it is more the importance rather than the numbers. You will no doubt have some KPI's/objectives in place already. Start by looking at them.
