First step: get a cross-functionsal team organized to help you with this project. As a team, take a look at your process flow diagram and see what processes are new, what processes are changed and what processes are the same. Update your Process Flow Diagram accordingly. Whether you do die cutting or 'kitting' (packaging), it is just an additional process step in your current process flow. You'll be surprised how little is changing. Anyway, after you finish your PFD start working on the
PFMEA for the new & changed processes. Develop your controls and control plans based on the PFMEAs, implement them, retain the records and you're almost done. Also look at the requirements of 7.1 & 7.5 and see what new requirements and controls you need for the new processes to make sure that you are not overlooking anything.
It sounds easy and it is easy if you believe it to be easy!
