Hello,

which risk metrics can i use to calculate the suppliers capacity constraint? (without data about the production capacity)

Maybe it's because it is late in the day, but I cannot imagine how to calculate a supplier's capacity constraint without production capacity data. Who is suggesting that you do this?

Maybe it could be the % of product delivered to you compared to what has been in agreement
For example
In the last 6 months, in each month we asked 100 % and always have received an average of 75%

my two cents, would urge you to research and review data from:
1) Initial Supplier Eligibility Assessment (SEA) - executed ideally before they become a supplier of yours
2) an periodic annual, audits etc,
3) External Supplier Scorecard

The above should yield all the data you need

Also History with the supplier. I would think that is relevant. On Time Delivery can also be an indicator of Manufacturing Capacity at said supplier.
