I'm new into this, I just took the Quality Manager Job in my company, and I was wondering if you can help me with what should be the list of controlled documents I should keep?

I would advise you get a copy of the standard (9001:2008) and read it thoroughly. Section 4 of this standard has all the requirements related to documentation and it's control.

If still you have some queries, post them here and you will have plenty of responses from various subject experts.

Thanx, I'll try to make a scheme of our QMS and come back with the issues I'll have.

As a very general 'rule of thumb', if a document is subject to change and having the wrong version could cause a problem, it needs control. Try not to get controlled documents confused with records - there are many discussion on the forum about this subject.

Examples of documents requiring control include:

Quality manual
Procedures
Work instructions
Standard forms
Drawings
Quality plans
