AS9100D scope missing processes

So if i dont change the scope to say that we do machined parts, and the iso auditor sees that we do machine parts and is not included in the scope will i get a non conformance?
No. Worst case they won’t look at your machined parts during audit and would consider them outside of your scope. We stamp parts and frequently machine features. It’s never been a problem. As I said, I think manufacture should cover it.

The standard states that the scope shall state the types of products and services covered, and provide justification for any requirement of this International Standard that the organization determines is not applicable to the scope of its quality management system.
The standard talks about the scope of the quality management system, which is not (necessarily) the same as the scope of certification.

We are a made-to-order custom machine shop, no design.
Our scope of registration says" Manufacture of Custom Machine Components for Aviation, Space, and Defense Industries"
SIC Code: 3541, 3728
We go on to list what our Outside of Scope is.
AS9102D 8.3 The Organization has no responsibility to define product fit, form, or function. Designs are specified by our customers via their drawings and blueprints.
AS9100D 8.5.5 The Organization excludes all clauses except specifically addressing Customer Requirements, Customer Feedback, and problems after delivery. The Organization shall take appropriate action including investigation and reporting per SOP-8.7 Control of Nonconforming Outputs.

In my opinion, and others may have differing opinions, Your exclusion for design is appropriate, but your exclusion to 8,5,5 is not.

There are two (at least) reasons I feel it is not appropriate is first, from the last paragraph in 8.5.5 which states "When problems are detected after delivery, the organization shall take appropriate action including investigation and reporting." It's kind of hard to get around that one if you ever have a mistake that escapes.

Second is from the note. I know you can't audit to a note, but it does provide illumination to the topic. The note says that "Post-delivery activities can include actions under warranty . . . " If you tell your customers that if they have a problem with what you have provided we will make it right, according to my business law professors, that is a warranty.

The beauty of 8.5.5 not being declared as an exclusion is in how it is worded.

"The organization shall meet requirements for post-delivery activities associated with the products and services. In determining the extent of the post-delivery activities required, the organization shall consider. . ." The standard then goes on to list things to consider.

Basically, you don't need to worry about post-delivery activities until the need arises, and when the need arises, you consider how to handle it from the list.

Basically, you likely SHOULD NOT exclude 8.5.5, and you will deal with how to handle an issue when the need comes up.
