Oddly enough:)sarcasm: there), I've found that those who work in the "making stuff" and "Making stuff work" fileds tend to be of a certain type that will not accept inferiority in anything.

This "type" also tends to succeed in other areas of life, and tend to get paid above average.

What this thread is about is that those who can afford the ingredients, and only tolerate the best results, tend also to have some of the best recipes for their discerning palates.

If you are willing to let the secrets out...this thread is the opportunity to let us all share in your culinary discoveries.

I'll be the first.

My wife and I call this "Always gotta have" Salad Dressing:

Add the following, in order, to a blender.
(It helps to have liquid measure marks on the blender. Most are 4cup blenders which works nicely.)

0.5 cup shallots (chopped fine)
2-3 sections of garlic (pressed)
1 tsp salt
1 tsp ground black pepper
1 tsp ground white pepper
4 Tbsp Dijon mustard
Balsamic Vinegar (fill to 2cup line of blender)
- Beat the heck out of it on high
Olive oil (NOT EV) or vegetable oil to the 4 - 4.5cup line
- Beat the heck out of it on high to totally emulsify it
- {my wife just corrected me and said that EVOO is fine...}

We don't use any other dressing any more.

Notes:
- Go a bit heavier on the shallots if you want, but don't exceed 0.75cup
- Go a bit heavier on the garlic if you want, but don't exceed 4 large sections
- If you don't beat it enough in the last beating, it may separate on you...simply put it back in the blender and beat it up again really well.
- Very cool thing: It does NOT require refrigeration...I've stored it up to 6mo with no ill effects.
