What are the processes for controlling CI's and KC's?

In AS9100, 7.5.1;

Planning shall consider, as applicable,
- establishing, implementing and maintaining appropriate
processes to manage critical items, including process controls
where key characteristics have been identified,

what should we do for above item and what could be proof for this item?

In a manufacturing situation, you would identify them during bidding and order acceptance. When planning for production (generating a work order/traveler), you would see if there are any additional ones, those not specified by the customer or recognized during contract review. Usually then you would accommodate them on the work order/traveler (provide detail about how you will perform the action or monitor them). If a supplier is involved, you flow down what is needed to the supplier with the purchase order. Inspections, including final inspection, confirm that you properly addressed all of them.

You need to fill in the appropriate detail for each situation, but that should point you in the right direction.
